Suggested Boneless Rib of Beef Joint Cooking Instructions

  1. Prep the Joint:
    Take the boneless rib of beef out of the fridge about 30 minutes before cooking to let it come to room temperature. Preheat your oven to 200°C (180°C fan) or Gas Mark 6.
  2. Seasoning:
    Rub the joint with olive oil, then generously season with salt, pepper, and any herbs or garlic you fancy.
  3. Searing:
    Heat a large pan over high heat and sear the beef on all sides until it’s nicely browned. This locks in the flavour.
  4. Roasting:
    Pop the joint into a roasting tin and place it in the oven. Cook for around 20 minutes per 500g for medium-rare, or adjust for your preferred doneness.
  5. Resting:
    Once it’s done, take the joint out of the oven and cover it loosely with foil. Let it rest for 15-20 minutes to keep it juicy.
  6. Serving:
    Carve into thick slices and serve with your favourite sides. Enjoy the rich, tender beef with all the trimmings!
