Simple Roasted Whole Sea Bass recipe

Ingredients:

  • 1 whole sea bass (about 1.5 to 2 pounds), cleaned and scaled
  • 2 tablespoons olive oil
  • 1 lemon, sliced
  • 4-5 garlic cloves, sliced
  • Fresh herbs (such as rosemary, thyme, or parsley)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1/2 cup dry white wine (optional)
  • Extra lemon wedges, for serving

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C).
  2. Prepare the Sea Bass:
    • Rinse the fish under cold water and pat it dry with paper towels.
    • Score the skin of the sea bass on both sides by making 2-3 shallow diagonal cuts. This helps the fish cook evenly and allows the flavors to penetrate.
  3. Season the Fish:
    • Rub the fish inside and out with olive oil.
    • Season generously with salt and freshly ground black pepper, making sure to get inside the cavity as well.
    • Stuff the cavity of the fish with lemon slices, garlic slices, and a few sprigs of fresh herbs.
  4. Roast the Sea Bass:
    • Place the fish on a baking sheet lined with parchment paper or in a roasting dish.
    • If using, pour the white wine around the fish for added moisture and flavour.
    • Roast in the preheated oven for 20-25 minutes, or until the fish is cooked through. The flesh should be opaque and flake easily with a fork, and the skin should be crisp.
  5. Serve:
    • Remove the fish from the oven and let it rest for a couple of minutes.
    • Serve the sea bass whole, garnished with extra lemon wedges and fresh herbs.

Tips:

  • Serving: Serve with roasted vegetables, a green salad, or simple boiled potatoes.
  • Checking for Doneness: The fish is done when the flesh is opaque and flakes easily with a fork, and the internal temperature reaches 145°F (63°C).
  • Alternative Cooking Method: You can also grill the sea bass instead of roasting it. Simply place the fish on a preheated grill and cook for 4-5 minutes per side.
